From there, Thomas went on to work at Michelin star restaurants including Le Violon d’Ingres* in Paris and El Chaflán in Madrid, meanwhile Vince set his sights on Australia, and moved from Ninkasi Brewery in Lyon to the Little Brewing Co. in Port Macquarie in 2010, followed by the Flat Rock Brew Café.
