Inoshin is an omakase experience from the team behind New York's Michelin-starred Kosaka, taking up an eight-month residency within the historic Hemingway Tower at Four Seasons Hotel at The Surf Club. Named for chef Shinichi Inoue, Inoshin is the culmination of a nearly 30-year career dedicated to the art of sushi. Following two decades of training in Tokyo, chef Inoue made his name in New York's restaurant scene, as chef of his eponymous Inoue, Kosaka and two residencies of Kosaka Miami. The menu seems to change fairly frequently, so the waitstaff don't know what is available, and items on the menu are often not actually available. But the food we did get was good, and the ambience was nice

Most of the staff is just lovely, the champagne opening at 6 PM is fun although we wish she had used a microphone so we could've heard every word. Bar is comfortable, not many vegan options sadly, we had to get the sushi roll every time we were there if we were hungry. Bartender Sergei is knowledgeable and knows how to make a good cocktail and modify .
