Chaplin's Executive Chef and Partner, Myo Htun, is originally from Burma, but was cooking ramen in Japan at a young age. Myo received a blessing from his mentor in Japan after nearly 30 years of cooking in Japan, to come to America and continue to showcase his authentic Ramen and traditional Japanese cuisine. We live in Los Angeles, CA and it's our first time in DC. We had Thanksgiving Day dinner at The Hamilton and it was perfect. Our waitress, Ash, was patient and attentive. Food serving portions were generous and tasty. The ambience and decor is modern yet classic, simply wonderful.

From beginning to end, the service was impeccable. From the greeter to the server, bartender to the manager, all were friendly, knowledgeable, and all clearly have a passion for their work. China Chilcano has a lively, vibrant ambience. The food is among the best and most unique in all of DC. And the pisco drinks are inventive, fun, and delicious.
