Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.     Excellent experience! The service was amazing. The server even had a business card. The food was excellent. They even had a kids menu which was very accommodating. Expensive meal, but worth every cent with the Sea Bass, Wine, and Desserts!

    This place is outstanding. Crowded but not overwhelming. Menu is limited, in a good way. The restaurant presents a number of simple and complex options, and everything tastes as fresh as can possibly be. We started with dressed oysters, then a kale salad - both dishes perfectly prepared. Then lobster pasta, and salmon, again extremely fresh. The complimentary table rolls are also nostalgically warm, buttery and seasoned with salt and garlic. I'd only been here for lunch, but definitely coming back for dinner soon!

    The Regular never disappoints. Even my 2.5 year old granddaughter loves. I wish I took a picture of her shoving the cauliflower dish in her mouth. It was like she couldn’t get enough. She enjoyed the seafood risotto too. You must get the fish head if it is on the menu.

    An absolutely amazing and welcoming establishment. Rarely do hospitality and exquisite attention to detail in both food and drink come together this well. Highly recommend!
