The wine list is a dynamic and ever evolving selection of our favourite wines from local and international producers. It is curated by our team to best reflect the vintages and compliment the menu offering. We offer BYO Tuesday, Wednesday and Thursday night dinner service and Friday/Saturday lunch service with $20 corkage per bottle.

Gilson offers an all day menu focusing on Italian cuisine and seasonal flavours. We have a 22 seater SUSHI TRAIN open Wednesday to Sunday lunches 12 - 3pm and Wednesday to Saturday Dinners 5 - 8pm it includes an EXPRESS train which delivers hot food ordered via a tablet. We offer QR menus at each table for ease of ordering, splitting bills and menu with pictures and descriptions. This type of ordering is optional so always let us know if you prefer to order with us.
