Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. We are honored that Primo has been designated a Recommended Restaurant in the inaugural Florida 2022 MICHELIN Guide. Led by award-winning chef Melissa Kelly, our restaurant serves authentic Italian cuisine, featuring organic produce and a carefully crafted wine list. The menu focuses on the farm-to-table experience with seasonal highlights including produce, honey and eggs sourced from on-premises Primo Garden and Whisper Creek Farm in addition to Mick's Farm and Frog Song Organics in the local community. All seafood is also locally sourced from Florida waters, including clams from Cedar Key, white shrimp and squid from Cape Canaveral, and Snapper, grouper, and other seasonal catch from Ponce Inlet. My sister and I took our parents to Bacan to celebrate my Mom's 65th birthday. I did tell the staff discreetly when we arrived and everyone made the event wonderful for her. All the food was wonderful, the presentation of each dish was artful and everything tasted amazing. It was a perfect celebration meal and they made her feel like a queen. Highly recommend.

Last minute choice after reading reviews. Sebastian was a great waiter. My wife h had salmon that she said was great. I had the burger that was really good but the French fries were awesome
