Nolia - Formerly Dig In Eats - is a continental European style restaurant with a south Louisiana influence. We have a 100 item menu of a la carte charcuterie (works like a sushi menu - choose your own adventure!), small plates and tapas, fresh local breads, and full-flavored homemade recipes. We are extremely sensitive to food allergies and restrictions, and most items on our menu can be made gluten free, nut free, etc. We have vegan and vegetarian options, and are happy to modify our plates to suit your needs. Our food is scratch-made, and slow-cooked. Southern faves such as Crawfish Etouffee and Red Beans pair up with ceviche, beef tenderloin carpaccio, and awesome weekly specials. Chef Lilli Black is from Louisiana, and brings her southern cooking along with her love for spanish, italian, and french cuisine.

“This Must be the Place”What's a Wolf Peach, you say? Well, it’s an interesting story.What we know today as the tomato was first grown as a crop by the Aztec Indians. Spanish explorers brought the tomato back to Europe in the early 1500s.In England and Germany, they were initially regarded as ornamental, but poisonous, a “wolf peach”. This is because aristocrats experimented with the tomato, but it ended badly—not due to the fruit, but because it was eaten on pewter dishes. Apparently, acids in the tomato leached the highly toxic lead in the pewter dishes, and caused illness and even death in many cases. The “common” folk, however, typically ate on wooden dishes, and had no problem!Wolf Peach is a place for all of us regular folks. A little uncommon, a little unexpected, a little special. A place for everyone and anyone to enjoy a good hearty meal, scratch-made from Chef Jason Okurowski.Firday and Saturday evenings will not accomodate parties of larger than 8.

One Barrel has prepared intriguing gourmet dinner menus that will delight foodies as well as those of you who just love good-tasting food. We're confident you wont get bored with our selections; we will be serving a rotating seasonal menu with daily specials. The One Barrel standards will allow nothing less than fresh, high-quality offerings, including Colorado ingredients as much as possible. Due to Covid-19 we will do our best to have all we can in stock but our menu will be limited and on first come first serve. We are taking safety precautions very seriously and asks all our guests to do the same. We're now open for lunch during the week, happy hour and dinner. We are thrilled to be back open and we can't wait to see everyone's smiling faces!

Colorado's First Authentic Chinese Hotpot Restaurant!In China, one of the more popular ways to dine out with friends is to hit a hot-pot restaurant. At these often raucous halls, you order a bubbling cauldron of broth — in Sichuan, it’ll be spicy; northerners tend to like milder lamb broth — and then dump in a progression of thin slices of fat-ribboned meat, vegetables, mushrooms, tofu and noodles. Once everything is cooked, you fish out a morsel with your chopsticks and dip it in a custom made dipping sauce or maybe some sesame paste, eat it and then start all over. It’s an interactive experience like fondue, and a good way to while away several hours.
