Cardinal is a relaxed fine dining restaurant from chef Tomas Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking. With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder. Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate. Tasting menus are our bread and butter but we also offer a pre fixe 'A la carte' menu.

Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements. Situated at 17 Merchant Street, Merchants Restaurant is proud to use fresh, locally sourced produce in its dishes. We booked in the morning we arrived in Edinburgh. We actually got engaged a couple of hours before food. Upon arrival the waitress was chatting to my finance and they got talking about the proposal. We were tested to a glass of fizz as we were seated and then talked through the menu which was amazing. Food was unbelievable and the service amazing. We had our 1 year old with us and they were great with him and we would recommend to go.

Just spent a wonderful evening at Merchants. The food was 10/10, staff were excellent and ambience perfect for a pre Christmas meal. This was our first visit to Merchants and it definitely won’t be our last! Thank you for a lovely evening!

Always a pleasure, the pescatarian tasting menu is exceptional. Fantastic ingredients, oyster, tuna, lobster, monkfish to name a few. Beautifully presented with delightful flavours and well thought out accompaniments. Service was good with each course described in just enough detail. Overall a lovely evening, and I would say consistently good as this was our third visit
