Curated by Aaron Taylor, Atlas Restaurant Group’s Corporate Chef & Chef Partner in this concept, the menu puts steak in the spotlight with over 11 cuts from Chicago-based meat purveyor Meats by Linz. The Ruxton will serve a mix of wet and dry aged prime cuts of Black Angus Beef, as well as dry aging Long Island Duck and Bison from Virginia’s New Frontier Farm in-house. Food was excellent. We were there at 3pm on a Saturday and there was only one server in the entire restaurant. He was dealing with impatient people, being double and triple-sat multiple times while we were there, and 10+ tables all on his own. So, overall, the service was slow. But, given the circumstances, our server deserves a medal! He was friendly, upbeat, and as attentive as humanly possible with more than 10 tables on his own.
