Chef Hakan is a second-generation baker who learned his craft in his uncle's bakery in Istanbul. His love for baking started out with making pastries and sourdough bread at first. Hit by a pizza obsession later on, similar to Anatolian flatbread, Chef Hakan studied, experimented, and observed various pizza-making methods. He participated in pizza expos, visited pizza restaurants, and tasted different styles of pizza around the world until buying a nice wood-fired pizza oven and creating his own recipe.Then time came for Hakan to open up his restaurant. Previously known as Napa Baking Company is now serving in Napa as Croccante. Chef Hakan offers long-fermented Pan-style Detroit and Chicago thin tavern style pizza. Napa Valley Bistro was opened in 2013 by chefs Bernardo Ayala and Ernesto Martinez, (also co-owner of Market in St. Helena). Their friendship and working relationship, which has lasted over 20 years was so successful, they decided to pool their resources and stake a claim in downtown Napa's expanding culinary scene. Their aim was to create their own version of classic world cuisine in a comfortable space where family and community could gather for any occasion. Love this place! Great food, great service, lovely location. We go here for special occasions (birthdays, anniversaries, etc) and would go more often but a) it's expensive, and b) it's an hour plus drive for us. Still, we always look forward to going back.

Walked around the cozy, picturesque town of Healdsburg prior to our reservation. When we walked in the front door, they greeted up by name, took our coats and offered a delicious warm tea from the kitchen window. We next walked into the dining room and felt like we’d stepped into a beautiful restaurant in Japan. The table was already decorated and prepared with the first bites, arranged on miniature rock garden. Each dish, each course was fantastic. From the immaculate presentation, to the ingredients, the taste. It was amazing. Would recommend to anyone. And only when we were leaving, did I find out that it’s also a hotel, where you can stay in Healdsburg, not only for their dinner rezzies but also for breakfast delivered to your room. I’d totally forgotten about that part. It was all amazing.
