Our inspiration is the Zeus Faber… John Dory, one of many local fish that can be fished sustainably and from our shores and although it has a wonderful Latin come Greek name it also has a very British name, John Dory. Faber is the Latin word for ‘Smith’ – Like a few other Latin occupational names (e.g. Agricola for farmer, Nauta for sailor). Smith being the most common name in English we decided it sits well with our name as we want to be accessible to all and give everyday people the opportunity to be part of our journey and own the business they work in.What sets us apart is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. This means that everything on our menu is fresh, sustainably sourced, and supports the local economy.We believe in creating dishes that are not only delicious but also ethical and responsible.

The Watermans Richmond is an all day Restaurant and Bar in the centre of town, conveniently located on an ancient cobbled street that leads down to the waterfront.Our food is the best of British ingredients, served with a nod to southern Europe, with favourite dishes ranging from scallop ravioli to fregola, veal chops and day boat fish. Food is fantastic. Probably closer to 2 Michelin Star than it is to no stars. Quiet dining room, but nice warm cosy fire, and very friendly front of house. Set Menu also fantastic value, considering the quality and tase of the food, and the effort that goes into it.
