James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

An Ambassador will call 1 to 2 weeks prior with questions to tailor the dinner. If you requested Chef’s counter seating, we will do our best to accommodate but have limited seating. Blind tasting menu: 7 course $137 each or 10 course $187 each. Wine Pairings - Silver: $100, Gold: $150, Platinum: $300. This is a unique dining experience; menus highlight unforgettable flavors from all over the world. The wine tier you choose will not change the quantity, but rather the quality, platinum being the highest, top shelf option. Other beverage options: wine by the glass or bottle, craft cocktails, non-alcohol choices. (All prices are per person and do not include tax or gratuity.)     My husband and I had an absolute amazing first time visit! We just moved here to OKC due to the military and seen the Vast was a recommended location for dinner so we decided to try it out! The server did really good, the host did amazing with sitting my husband and I in a corner with all window view! I love this restaurant and definitely will be back!!

    This is our new favorite restaurant! We had an absolutely lovely Christmas Eve dinner and everything is perfect. I highly recommend the lobster and shrimp risotto and my husband really enjoyed the Rhode Island Fisherman’s stew. The crab cake appetizer is by far the best in Oklahoma (our daughter lives just a little north of Baltimore and it gives our favorite place from there a run for its money! ) Go - you will love it.

    We keep coming back because the food and cocktails are delicious and consistently good. The service was attentive and accommodating. The atmosphere is comfortable and relaxing.
