Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Ok. There are restaurants and there are restaurants. This is is unique in so many ways. The look , atmosphere, hospitality you feel as if you are in Italy or New York. Top that with the food big portions yet quality is very noticeable. Service is excellent very authentic can even hear them speak Italian. Love love this restaurant. Best time in the state. Experience is what this place is about and why we go.

We had such a special holiday tea. Each person gets to make their own selection of tea and gets their own pot. We got to take home a box of the special anniversary tea and make some extra holiday selections from a roving cart. We loved the special treat at the end to celebrate our anniversary- really sweet considering this was not something we directly communicated to the restaurant. Amazing service!

Carmine’s is one of the best food experiences we have had in awhile! Service was exceptional, the lobster pasta special was a dream, the fillet with gnocchi was lovely. And the bread pudding was amazing. Thank you for a great evening. We will be back!

We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!
