Ever since the first caveman decided to slap a side of mammoth over the cave fire, man (and woman) has enjoyed the flavor of food cooked over a wood fire. At Timber Wood-Fire Bistro, all of our dishes are made from scratch using the highest quality ingredients. They are then cooked either over our state-of-the-art wood burning grill or in a brick oven heated by the embers of logs. Cooking in this way imparts a slight smokiness as it brings out the natural flavors of the food. A juicy ribeye sizzles and caramelizes, giving the tender beef a gorgeous crust. The homemade dough for our pizzas rises in the heat, and the crust gets to be the perfect combination of crisp and chewy. Vegetables share an entirely new flavor profile when cooked over wood.     The entire experience at Spezia was wonderful. Our server was attentive and knowledgeable and made sure that everything we ordered was safe for me to consume with a gluten allergy. The atmosphere was quiet and romantic, a great place to celebrate Valentine's Day. We will definitely be returning for date nights in the future!

    Excellent wait staff and ambiance. We had the broiled oysters, featured seafood of mahi-mahi with lemon beurre blanc, and the blackened chicken linguini. All of which were excellent and super tasty. The pasta was one of the best pastas I’ve eaten, and the broiled oysters were perfect and are a must-try. I highly recommend this place, and we will be coming back.

    Always a delicious meal with great service. Today, was a special Valentine’s menu and it didn’t disappoint. We enjoyed the scallops and Wagyu Denver steak! Desserts were scrumptious (berry cheesecake and raspberry beignets with ice cream and caramel sauce). Love this restaurant. We were also pleasantly surprised to see Steven again as our server. He is very knowledgeable and friendly.

    We dined on February 13, 2025 and had the Valentine's Dinner for two of a shared Chateaubriand steak and a lobster tail. The food was amazing as well as the Daou cabernet sauvignon. What was even better was the service by Sevita. She was friendly, professional, funny and attentive. We didn't lack for anything during our holiday meal. We are always amazed at what a wonderful dining experience we have each and every time. Thanks Sevita and Fleming's!
