Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18."We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input.""Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Great service, and the food was exceptional as usual! The atmosphere of the historic 1888 church with the stained glass is a unique dining experience for sure. Loved the privacy of The Last Supper table on the balcony. Always kid friendly, but can also be a a good place for intimate dinner at the confessional table.

From the second you walk through the door, you feel like family. This was my first visit and has already become a staple for us. Carlos greets you with a vibrant smile and genuine excitement for you being there! From the first greeting to the closing of the check, you feel 100% taken care of and valued. An amazing and beautiful dinner. I have never been to a restaurant where the host met u at your car. Carlos Bistro is an exceptional restaurant with mouth watering entrees. The pork belly was so good and oysters on the half shell very fresh. Will definitely visit again. Thank you Carlos.
