At SALT, our passionate commitment to sustainability inspires everything we do. We source quality ingredients from local farms and believe the shortest distance from the farm to the table is best. We only serve grass-finished beef, humanely raised chicken and pork, and we purchase Wisdom Farm eggs from Haxtun, Colorado. By sourcing locally, we know where our produce comes from and the person who grew it. Not only does this showcase what farmers in Colorado do so well, but it gives our guests the opportunity to support their neighbors and friends. Kokopelli Beer Company is the first solely woman owned and operated brewpub in the state of Colorado. Located in the Solaire Shoppes at 8931 Harlan Street in Westminster Colorado, we are across from the future Downtown Westminster development at Highway 36 & Sheridan. We enjoy brewing quality and consistent handcrafted ales, and are proud to offer 30 unique taps, including at least 27 of our own, in-house made craft beers covering the style spectrum, as well as a few guest taps of ciders and sour beer. Our craft beer selections are complemented by select Colorado wines and spirits.
