Thoroughly flavorful, salted, gently, and evenly all the way through, tender, and as fatty as I love this cut to be. The chef grilled it beautifully medium rare (as requested).... compliments to the Chef. The professional table service was equally fantastic. We had asked for a round table for 6 and that is exactly what was set up. The food was fresh (fish) and delicious! Our server was really friendly, prompt, and seemed to like her job.
