The George, a Michelin-starred establishment, offers a friendly and sharing gastronomic experience orchestrated by the indispensable chef Simone Zanoni. Thomas Danigo a l’impertinence et l’envie de se dévoiler tout en préservant ses secrets. À travers chaque composition, c’est un souvenir de ses explorations qu’il transmet, transformant une assiette en une surprise sensorielle pour les papilles, les yeux, le nez. Des viandes et poissons cuits au Konro, des épices et tubercules mariés dans une harmonie surprenante que seuls les voyageurs osent tenter, des sauces colorées et légères, des acidités provocantes…On arrive au Galanga le ventre vide, on repart le cœur léger et le palais joyeux. Pas de lourdeur, pas d’ennui ni déjà-vu. Fort de ses expériences, dont 7 ans au restaurant étoilé Laurent, Thomas travaille le végétal, l’amertume, l’oxydation, l’acidité, honorant les produits du terroir et des producteurs qu’il aime tant. À l’image de son établissement, intimiste et feutré, le chef récemment étoilé au guide Michelin Thomas Danigo dévoile son savoir-faire autant que ses émotions.
