El estilo gastronómico de Makoto está basado en la tradición, el cual se revitaliza con toques frescos y originales. La marca proviene de Bal Harbour, en Miami, diseñada en 2011 por el chef Makoto Okuwa, quien fue discípulo de Morimoto.
