Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Since its opening, it has earned a loyal following by the locals, as well as plenty of great reviews. Food and ambiance excellent. Dinner was a little more than I anticipated. Restaurant might be a little over staffed, always had somebody hovering. My wife and I ordered Burrata with arugula, the table served Caesar salad and Grilled fish prepared table side by Hugo. The food was spot on. They also have a drummer who does about a 12 minute set at 830 and 930…he really gets the place going. We told the servers to take their time as we were in no hurry, glad we did. They are on things so quickly. Definitely the evening was great.
