Each dish showcased a deep respect for native ingredients, blending tradition with innovation in unexpected yet harmonious ways. While every selection stood out, the true revelation of the evening was the Rosa de Uva from Bodega del Viento (Coahuila, Mexico)—a beautifully balanced rosé that exemplifies the growing excellence of Mexican winemaking.
