Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. We enjoyed great meals last night at Allistir One of us had the scallops and I had the venison. Both were excellent with the accompany vegetables also excellent. We eat at Allistir often and these were some of our best meals and the new chef Joel is obviously doing wonderfully. We recommend eating at Allistir.

The restaurant did an amazing job dealing with a power outage in nearby neighborhoods meaning it was packed! Our server was so busy managing many tables yet our drinks and meals were served in a timely manner. The food was well-prepared and delicious. Recommend pasta carbonara and spaghetti bolognese. Also, the Barbera and Chianti wines by the glass were very nice.
