The ingredients in our menus reflect the region’s sustainable farmers and producers with a soulful and honest approach showcasing the bounty of the Ohio River Valley. Housed in five historic buildings in downtown Louisville, Proof on Main is part of 21c Museum Hotels, the award-winning boutique hotel and restaurant group. The dining room is one of the most striking public spaces in the city, with rotating, contemporary art exhibitions by local and internationally-acclaimed artists alike.

Nice quiet atmosphere which after all the high ceilings and concrete floors of other restaurants was much appreciated. I had the rock shrimp risotto which was excellent and received warm. My husband's bison burger was good but not warm. He would have sent it back but we had theater tickets and the service was not quick. Service- a little odd. Hostess did not have great social skills. Drink order was not taken for almost 10 minutes. So we went ahead and put in our food order- and we never saw that sever again. Servers were friendly - just not attentive.

From the symbolic atmosphere to the care in service to the chef inspired dishes and drinks, this experience was 5 star. We arrived early and had a drink in the LGBTQ inspired bar and were met with a warm welcome from Jacob who helped me pick a red blend which was the perfect temperature when served and had a smooth finish and plenty of character. Husband had a sazerac and Jacob told us all about the history of absinthe which was sprayed atop his drink. Unique and worth a try. We were seated at our scheduled time and greeted by Maria, who told us it was her last day there. Her professionalism shined through as she gave us recommendations and explained ingredients in the dishes. We ordered the grilled Caesar salad to split. The dressing was robust and creamy and delicious. For main, I got the 1/2 chicken and husband got the shrimp risotto. My dish was beautiful and the flavors and textures were well composed. Chicken was tender and the sauces were excellent. Fennel atop the dish created a whimsical and flavorful addition. Husband enjoyed the risotto, cooked perfectly with rock shrimp and a little heat. For dessert, chef’s take on tiramisu. The base may not have been lady fingers and tasted more like chocolate cake. Still, pleasant, creamy and dusted with bitter chocolate. We would recommend this restaurant highly. Our compliments to the chef and staff for making our visit so special. The Indian artwork and symbolism in red to represent the blood shed was quite moving. Thank you from the Chicagoland folks.

From the art and atmosphere all the way to the drinks and the food, we really enjoyed reading your feedback and all the extra interesting descriptions you included to give us a full run down of how your evening went here at Proof on Main. Jacob is very knowledgeable about spirits and we are pleased he was able to share a little of what he knows with you all and I am sure after your visit you can see why Maria will be missed here at Proof. The risotto is amazing and even better our menu is ever changing with the seasons. The chefs love to put their creative twists on classic dishes and they love when people notice and enjoy their art. We love to take out-of-towners to Proof not only for the food, but to see the 21C art museum. The carrot soup and fancy grilled cheese was perfect for a wintry day. Our guests enjoyed bison burgers.
