I've had the fortune of visiting some of the best steak restaurants throughout the nation, and the Beef ' Bone does not even make "my" top 100 for quality or service. They are too overpriced for the experience I encountered.
The worst experience for the evening was the service. They open at 5:00 pm. for dinner service. We had 5:00 pm reservations for a party of 6. We were the second party seated. There were 4 other parties seated behind us spanning 15 minutes. 3 of the other parties were serviced with drinks and orders taken before us. During the meal, we had to ask, multiple times, other servers/workers passing by for drink refills, extra napkins, and missing food items.
In my opinion, the flavor profile of a dry-aged steak far exceeds that of a wet-aged steak. Thus, I ordered the 30 oz. dry-aged bone-in ribeye special (~$85) to split with a family member. The portion size seemed smaller than it should've been, even considering the bone-in serving. The meat was tough to chew at MR temperature, and the texture was a little dry. Additionally, we ordered the mushroom sauce topping for an enhanced steak profile. It was not good. It was severely lacking flavor. The only benefit was it somewhat replaced the needed moisture to the steak.
At the end of the meal, after all of the plates and table were cleared, we kept waiting for 20 minutes before we could find our server to ask for the check to be brought to the table, and then we waited an additional 15 more minutes for her to bring it back to be signed! Needless to say, we will NOT be returning to this restaurant or recommending it to any of our friends or family.
