There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish!

That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part.

A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Chef and owner Enkhbileg “Billy” Tserenbat has been cooking in the Twin Cities for more than 20 years and often checks in on tables himself, so don't feel shy asking him for menu recs. Settle into one of several sleek tables, choose a drink from the extensive sake and whisky selection, and be prepared to have one of the best nights out.

    The food was delicious and the service was exceptional. Our waiter Aaron was very entertaining and he took really good care of us! Love a server who keeps the table maintained throughout the dining experience. His OCD was on the same level as mine lol.

    Food was incredible, drinks were good but on the small and expensive side, still very good. Will definitely go back.

    Exceptional sushi and service! We had three starters-- the special bluefin tuna sashimi, lobster spring rolls, and shishito peppers. All were wonderful. The waiter recommended the special which we would order again. We had three maki rolls, which were generous in size, and superbly fresh. The timing of food delivery and drinks were great. It's expensive but worth it. You need a reservation because it's packed.

    Food was great, service was great, drinks were meh. Will definitely go back, maybe give drinks another try.
