Included in the World’s 50 Best Discovery list and is MICHELIN Guide recommended, Executive Chef Hector Laguna’s menu represents the botany of British Columbia and celebrates the biodiversity of the Pacific Northwest, where locally sourced ingredients are coupled with contemporary techniques. Located in the heart of Coal Harbour, the restaurant is home to Botanist Bar and includes a terroir-driven wine program that supports small-batch sustainable and biodynamic farming practices.

The award-winning Botanist Bar features a list of inventive and sophisticated cocktails, designed under the direction of Creative Beverage Director, Grant Sceney. Since opening, the Botanist Bar has received notable accolades including ranking #24 on North America’s 50 Best Bars List 2024 and #21 in Canada by Canada’s 50 Best Bars 2024, Top 4 Finalist– Best Hotel Bar by Tales of the Cocktail Spirited Awards and awarded the MICHELIN Exceptional Cocktails Award 2022.

    Exceptional staff, service, ambiance, food quality and hospitality. This is my third time enjoying Hector’s creations and he never disappoints. The Botanist staff is worth experiencing as much as the food. Absolutely superb quality and food pairing, wine paring and menu creativity. The menu changes with the season but if you are around in the winter anything suck, lamb or pepper salmon is and will be divine. This is a must experience!

    The best restaurant in Vancouver in my opinion, taking into consideration all the factors such as quality of ingredients, level of cooking, service and professionalism of people working there, ambience! We just had a Chef’s menu and a wine paring to it. Amazing! As usual though.

    We celebrated our anniversary and could not have been happier with the service and the food. We received a complimentary glass of champagne to congratulate us, which was unexpected and appreciated. We shared the scallops as an appetizer and I had the duck and my husband the steak. It was all prepared to perfection. The bread was from a local bakery and was to die for, so good. The service was super attentive, the food and wine explained to us in major detail. We really enjoyed our experience. Although a little pricey, it was well worth it.

    What a great lunch! The service was a bit on the slow side as the restaurant was full, but everything was well executed and the food was delicious.
