The restaurant, led by award-winning chef José Andrés, honors Peru’s deeply rooted and diverse heritage, including its native Criollo, Chinese Chifa and Japanese Nikkei cuisines; its name an homage to Peru’s renowned fish stew and its popular national drink, the Chilcano.

I did the chef’s tasting brunch. It was truly 5 star. So, so good!! Peruvian stew, ceviche, and fruit salad with a yummy pisco sour. 🤤

Super good food. The rice “hot pot” and the nikkei sevichi were innovative and delicious. Very good service. On the louder side, but not too much. Will go back.

Food is unique and very tasteful. Not too expensive either. Busboys did not communicate well of what was being served and felt very rushed. Drop the food and leave without explaining much.

Food was mediocre - some of the dishes we tried just didn’t taste good. Very disappointing. The yellow neon lighting was awful too - made everyone and the food grey. Unappetizing
