ChoLon, which translates to "big market,” is named after the largest Chinese-influenced market in Saigon, Vietnam. At ChoLon, Chef Lon Symensma brings to life his extensive culinary travels throughout Southeast Asia. ChoLon's menu features inspired interpretations of traditional dishes found across the region, with presentations ideal for sharing. From dim sum or "small bites" to large family style plates, ChoLon offers authentic flavors for the modern palate. The bar and lounge serves handcrafted, artisanal cocktails developed to complement Symensma’s cuisine. The venue is also ideal for business meetings, presentations, large parties and events.     Cholon is well worth a visit. The food is eclectic and interesting without being too insanely avant-garde. The Thai Brussels sprouts were excellent— spicy and flavorful. Perhaps all the hype spoiled the French soup dumplings for me: A+ for originality B+ for flavor. I wish I’d been hungrier when the pork vindaloo arrived, but I’m looking forward to the leftovers. Although the service team were focused on getting us fed and out of there so they could get on with their Friday nights, the service was professional and courteous.

    The food and service was excellent. I wanted to try everything. We split the soup dumplings and Baos to try everything. The Gruyère dumplings were very interesting and delicious but the General Cho ones were amazing. The baos had a nice display and also, the flavors were on point. Then we had the Malay noodles with steak (such a good choice, the steak was cooked perfectly) and pork vindaloo. The pork vindaloo was an incredible dish but I would say more inspired by vindaloo as it was not that spicy heat. But the flavors were marvelous nonetheless. Would definitely go back and try many dishes and cocktails.

    Was pretty disappointed in our visit to Cholon. Took 15 minutes to get our drinks. The apps made it to our table before the drinks did. The 5280 menu was pretty weak. Service was subpar and server brought us the wrong check at the end of the night.

    Our first date just over a year ago was at ChoLon! We returned this past week for Restaurant Week. From the moment we arrived, the atmosphere was warm and inviting, setting the stage for an unforgettable meal. Our server, Abby, was beyond amazing—attentive, friendly, and incredibly knowledgeable about the menu. She made excellent recommendations and ensured we had everything we needed without ever feeling rushed. Truly top-notch service! The food was just as impressive. The dumplings arrived hot and bursting with flavor—each bite was pure perfection. The noodle salad remains one of our all-time favorites, with its fresh ingredients and bold, delicious flavors. And to top it all off, the coffee and donuts were absolutely to die for—the perfect sweet ending to an already incredible meal. ChoLon continues to exceed expectations with its outstanding food, impeccable service, and welcoming ambiance. Can’t wait to go back!

    Place has really gone downhill. Bad service. They brought out all the food at once, when it has always been coursed out. So half the food was cold when we ate it. Got a bit of an attitude from my server when I brought it up. This place used to be my favorite restaurant but I’ll be hard pressed to be back. Felt like I wasted my money last night BIG time

    Great experience for restaurant week! Would come again just for the french onion soup dumplings. All dishes we had were solid and we really enjoyed it.

    For a long time, Cholon was absolutely in my Top 3 for restaurants in the city. However, it's just a fact that the food quality fallen since COVID. Example: the French Onion Soup Dumplings are much more 'doughy' and lacking in flavor. The price has gone up, a LOT, but now they taste more like a big lump of potato dough (with just a hint of soup flavor). Very underwhelming. I've also noticed that the servers have gotten incredibly entitled and more than a little arrogant. They are not there to serve you. They are getting paid $20 an hour minimum wage PLUS TIPS, and they still act like total divas. Pro tip: Get over yourselves! If you hate your job, quit. Lunch today for 2 people was $130. Yes, you read that correctly. Zero alcohol, by the way. And still, I have to listen to the waiters and waitresses bit** about how they are underpaid. Bottom line: Underwhelming, overpriced food. Denver crime. Lack of parking. Diva waiters and waitresses who act like they are in Aspen. Eyes wide open. You've been warned.
