ChoLon, which translates to "big market,” is named after the largest Chinese-influenced market in Saigon, Vietnam. At ChoLon, Chef Lon Symensma brings to life his extensive culinary travels throughout Southeast Asia. ChoLon's menu features inspired interpretations of traditional dishes found across the region, with presentations ideal for sharing. From dim sum or "small bites" to large family style plates, ChoLon offers authentic flavors for the modern palate. The bar and lounge serves handcrafted, artisanal cocktails developed to complement Symensma’s cuisine. The venue is also ideal for business meetings, presentations, large parties and events.     The French onion soup dumplings are to die for. Our entrée was simply just okay. Small bites and appetizers are the way to go.

    We took our daughter, son-in-law and 3-year granddaughter to lunch. The whole staff couldn’t have been more attentive to our granddaughter. The food is sharable bites of four to a serving which was perfect for us. Our granddaughter had her own menu. We had several dishes and each one was great. We’ll be back soon.

    ChoLon was a decent experience but the food wasn’t as good as I expected. Had quite a number of dishes but most of them seemed to be covered in too much soy sauce or some type of sauce - for example the Kimchi Fried Rice and Bulgagi had very strong sauces. The dishes that were good were the Pork Belly Bao Buns, Beef Skewers and Chargrilled Chicken. Service was great and we were welcomed and served nicely. There was a compulsory 6% wage fee but seems like there are a lot fees that pop up on bills.

    ChoLon Modern Asian truly delivers on its reputation for incredible food and expertly crafted drinks! Every dish we tried was bursting with flavor, and the attention to detail in the presentation was outstanding. The soup dumplings were an absolute standout—rich, savory, and perfectly executed. The balance of bold spices and delicate textures across the menu made for an unforgettable dining experience. The cocktail menu was just as impressive, with creative, well-balanced drinks that complemented the meal beautifully. Each sip felt thoughtfully curated, enhancing the flavors of the dishes. The only downside was that the service didn’t quite match the excellence of the food. The host wasn’t particularly welcoming, and the service felt a bit impersonal at times. However, the quality of the food more than made up for it, and I’d still highly recommend ChoLon to anyone looking for a top-tier dining experience in Denver. If you’re a food lover, this spot is a must-visit!
