Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    Steaks were ok, seemed a lower quality of meat than we usually have here. The steak flavor was just not as good as normal. Sides were good. The server was pleasant.

    Nice restaurant. I gave food four stars because it is limited for someone who is gluten-sensitive. Not a lot of options except for salad. Service (Jackson) was great. A bit pricier than comparable restaurants.

    What a disappointment. Having heard great things: it was definitely FAKE news. Service was very, very slow!. Two beers do not take very long especially when the restaurant is not busy. We asked that our salads and soup be brought together: they were not. Soup (lobster bisque) was barely room temperature and a very meager amount served in an enormous bowl. Salad: average. One of them did not even have dressing on it: had to ask for that. Granted, we had six different checks, but it took FOREVER for them to be returned to sign. They automatically added a gratuity which was generous at best. For the very high prices of the entrees (very difficult font on the menus), it was truly not worth the money because it was not a pleasant experience. We sat in front of the window: so cold!. When they did run the check, they got two credit cards mixed up!! Will not go back. There are more efficient restaurants that serve hot food, that does not cost a fortune.

    Very nice atmosphere for special dinner out. Great steaks, scalloped potatoes, green beans & salad. A little skimpy with bread, and did not like creamed spinach. Service was outstanding. Quiet expensive.

    Unfortunately this is for Thanksgiving 2024, we have dined in Choplins several times, I like what they have done in the past with school lunches and feeding the homeless. As a single mom we always have a friendsgiving at home, I cook and host and like to go out with just my family at a nice restaurant and not have to cook or clean. This year we chose Choplins, we had a reservation for 2:15, seated approximately 2:25, we ordered drinks, and chose off the prepared menu. Prices are average for lake norman, we didn't receive anything till 4pm. At that point we have another event to go to that we couldn't miss and had our food boxed up in to go containers. The food itself was underwhelming, dry short ribs, awful greasy duck, and an overpriced dry pork chop, all of it was dry besides the duck. Mashed lumpy bland potato's and 4 string beans. As a single mom I understand going out on a holiday will be expensive but that's my choice, to spend over $300 and tipping the employee that's there on a holiday by their own choice and the entire experience is terrible shouldn't be so awful at a place that's been good in the past. What's the difference from a weekend from a holiday? The menu is a fixed menu. Potato's are already made as are the little string beans, it was just not a good experience at all.

    Thanksgiving for two people at the two o’clock seating, we arrived 15 minutes early, were greeted and told to wait outside until two o’clock. Not exactly the warm, thankful greeting we were hoping for, since there were seats and tables avail, but okay. Everyone for the two o’clock seating was standing at the entrance, crowded around, waiting like a herd of cattle. Not very inviting and welcoming for Thanksgiving. Our dinners were good. No complaints there, but at over $200.00 for two it shouldn’t such a disorganized situation. Jackson, our server was good. We had to ask for salt&pepper, extra salad dressing, sweetener for tea, and a steak knife during our dinner. It was highly rated which was why we chose to have dinner here. Won’t be back, however.

    Very nice cozy neighborhood restaurant. Have been there many times for special occasions or for date night. Have always gotten great service and food is amazing. Also have seen prices increase. But that is all restaurants. Treat yourself. Definitely worth it.

    We come here at minimum every year on our anniversary. This chef is a culinary master! Food and service is always top notch. If you've never been here, it's an excellent choice for special occasions.
