Eight Settlers Distillery & Restaurant is the culmination of a longtime dream to build a distillery and share the finest local foods with our community. Eight Settlers is a blend of the 1850’s traditional vintage western style with a modern twist of the second industrial revolution. The Chef’s inspiration for the menu is Modern American with traditional twists, while the spirits are distilled and blended to the highest standards with the best grains available.

Food was amazing. The service was kind and attentive. The music was a bit out of place for the restaurant. Overall a fun night would come back.

Our dinner was lovely. The location is beautiful near the mouth of the canyons. Ambience is what I would term industrial elegant, contemporary chandeliers with copper top tables. The food was amazing. I had the mushroom risotto which was rich and definitely comfort food with layered flavors. Husband had the Waygu burger with truffle fries he said were delicious. Daughter had salmon which was perfectly done. Service was very good. Nice experience!

When you offer a $26 cheese burger and ask me how I want it cooked, and I say medium, don’t bring it out very well done. And a lot of people at my table were unhappy with their food also. Great ambience, but the food needs some help as it’s not worth the price.

Derek was great and very knowledgeable! The food and ambience cannot be topped! Highly recommend the Bacon Wrapped Dates and Mushroom Risotto.

Food was good, service met expectations, but everything overpriced. RibEye wasn’t worth $48. Each time we visit they have rooms reserved thus can’t enjoy the views. Place essentially shut down at 9 on a Saturday but weird residents aren’t their responsibility.

As for the hours of operation, we’re open until 10 pm on Fridays and Saturdays, with the last seating at 9:30 pm, so you can enjoy your meal comfortably. We understand your frustration with the reserved rooms and apologize if it impacted your experience. We do our best to accommodate all guests while maintaining a pleasant atmosphere.. The staff were milling about with no sense of urgency. Waitstaff looked at us several times, but no one came to even give us water. We were waiting 25 minutes after being sat for someone to greet us before we decided that we weren’t going to be attended to. When we got up to leave is when someone came and asked us if we had been helped yet, then tried to get us to stay. That’s not good service. That’s terrible service. The restaurant floor was not busy. There was plenty of empty tables, bussers, hostesses, bartenders, and waitstaff. I watched the manager and other staff walking the floor several times, but we were never helped. Our table was in a prominent position as well. We will not be back.
