Discover Denver’s craft beer and dining at Former Saint Craft Kitchen and Taps, featuring 16 local brews and contemporary Colorado cuisine, including a daily breakfast buffet. Enjoy a la carte lunch and dinner in our sunlit dining area, with dishes crafted from locally-sourced ingredients.

The name "Former Saint" pays homage to the rich history of our location. In 1864, three pioneering Sisters of Loretto journeyed from Santa Fe to Denver to establish St. Mary’s Academy, which operated until 1910. Inspired by this pioneering spirit, our menu celebrates Colorado's adventurous spirit with thoughtfully crafted dishes and a commitment to sustainability. We partner with local ranchers, brewers, and distillers to offer hand-selected, sustainable meats, produce, craft beers, spirits, and wines. Enjoy Life in the Spirit.

    Welcome 2025 with a feast at Former Saint Craft Kitchen and Taps. Our New Year’s Day breakfast buffet, served from 6:30 AM to 2:30 PM, is the perfect way to kick off the year! Along with our classic breakfast favorites, the buffet features Chicken & Waffles, Eggs Benedict, Breakfast Burritos, and more. All this is yours for just $26 per person. Add to the celebration with our loaded Bloody Mary for $20. This one-of-a-kind drink is topped with a mini grilled cheese, beef slider, celery, a skewer of olive, cheese, and pickle, plus a chocolate-covered bacon garnish.

                                        My friend recommended we have Christmas dinner at a restaurant, and we found Former Saint offered one. They had a set 4-course menu with plenty of options based on what you like to eat. I assumed the portions would be small since they were providing 4 courses, but the portions were quite large and the food was delicious! I was very pleasantly surprised. In addition, our server was wonderful! She offered to take pictures of us, and checked in with us just the right amount. The fixed menu was a good price, but after our experience I believe it was a great value! It is very likely we will go back again next year.

                                        Christmas Eve dinner was fantastic. Excellent service and food. Charcuterie and 3 courses was a lot of food, & well worth the price.

                                        I was excited to dine here, but it absolutely was the worst dining experience from a quality of food standpoint I’ve ever had in Denver. Food was bland, cold, lacked flavor, and was inadequately prepared.

                                        This is a typical hotel restaurant. Food was good, but highly overpriced. Same with cocktails/drinks. Server was very casual, did not explain options well, and struggled to do typical accounting and bills. For the price, there are many other options in the area.

                                        Nicole is super wonderful and friendly. We loved the food, the drinks, the incredible rustic dimmed ambience with wood furniture and beautiful ski paintings; along with the amazing top floor views. A must visit for a tourist as ourselves and locals I’m sure!

                                        You never know about hotel restaurants. This one is quite large, doesn't feel intimate, but is nicely decorated and a pleasant place to be. We visited for lunch on Sunday and had the place basically to ourselves. Since it was empty, it was very quiet, no loud partiers or children. We don't like noisy places, to this was a plus for us and ideal for conversation with our friends. No complaints on the food or the prices, everything was tastefully and well-prepared and arrived at the table hot, another plus. Our waiter, Jorge, was a delight, very attentive, responsive, friendly and fun. He was somehow at our beck and call but disappeared when we wanted to be left alone. Quite positive experience.
