Welcome to Il Gusto Restaurant and Wine Bar, Cheshire's newest Italian dining experience, brought to you by restaurateur Gina Baca and Frederico Agraja, the chef and owner of the acclaimed Adriana's Restaurant and Wine Bar in New Haven. Situated at the historic location of the former Waverly Inn at 286 Maple Ave., Il Gusto revives a cherished local landmark, combining the rich heritage of its predecessor with the vibrant flavors of modern Italian cuisine. Il Gusto will feature a menu reminiscent of Adriana's, offering a delectable selection of traditional and contemporary Italian dishes. With seating for over 220 guests and a spacious banquet room, we are the perfect venue for dining, parties, meetings, and special events. Our goal is to preserve the history of the Waverly Inn by showcasing framed photographs of the original establishment, creating a warm and nostalgic atmosphere for our guests.

We enjoyed lunch here on New Year's Eve 2024. 6 adults and 1 child. Service was friendly, efficient and knowledgeable on the menu offerings. I am non-dairy and they were happy to modify the Scallop dinner to my needs and preferences. The scallops when first delivered were minus the bacon as requested and seared just the way most people would probably prefer. I like them with a visible dark brown sear, and our waiter quickly took them back and had them seared perfectly for me. They replaced the mashed potatoes with their french fries which are closer to a steak fry and delicious. We also had the salmon dinner, the Bolognese, the broccoli rabe and everyone really enjoyed their meals. On the broccoli rabe, my friend said it was done perfectly and not the slightest bit bitter, a challenge she has when cooking it at home. They have a good selection of beverages including some mocktails. They had several specialty drinks, wine, beer cider and a full bar. Unfortunately there were no IPAs, a preference for 3 of the people at the table, but that wasn't a big deal. Our lone 9 year had the chocolate lava cake and loved it. We were all too full and passed on dessert. We all agreed we will be back.

No wait. Reservation was on time. Peroni on tap my favorite beer! Service was impeccable. Food was spectacular, great fried calamari, large delicious portions. Desert was amazing, served with a piping hot cappuccino. Plenty of parking. Great dining experience! I highly recommend IL Gusto

It's great to see a restaurant at the Waverly again and this one will surely last. It reminded me of Adrianna's in New Haven. Portions were humungous and the quality and service were excellent. I had fettucini w/peas, prosciutto and mushrooms in a scrumptious cream sauce. My sister had braised short ribs over mashed potatoes and asparagus and my husband had two large breaded pork chops that were not thin sliced at all as listed in the menu. Everything was delicious. Can't wait to go back and try more things since the menu had quite a nice variety of dishes.

Food was great. Bar area had a great vibe. Service was a little slow but they had several holiday parties happening, so it is to be understood. All in all a great new spot

Loved the food but the noise was incredible. I won’t go back until they add some noise absorbers. We couldn’t have a conversation. The food was delicious, though.

2nd time here. Food is good menu has great selections and good specials it’s a nice addition to the town. I just wish the service was good it’s just not there. They start off good getting your drink and food order then as you wait for your food no one comes back to check if you need a drink refill or are doing ok. Too forever to get another drink, the check and then the check to be paid. If they get their service up I think this will be a great restaurant. The poor service almost makes it a deal breaker.

Another great meal there. Food was delicious and portions are huge. Great value. The owners are lovely, very personable, and the staff are very hardworking and were very attentive. Ordered the orrecheta with sausage and broccoli rabe and the salmon special was out of sight. Ordered squash blossoms to go to try next day and the were also delicious. The history in there brings back great memories of the Waverly. Il Gusto is a wonderful addition to Cheshire and very much so needed.

Food was awesome. A bit noisy for me on a Saturday night. Went mid week and it was fine. Service was very good.
