J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

Please reach out to our reservationist for private dining.
We offer Valet at $12 daily

    Our new favorite steak/seafood restaurant in town. We’ve been to almost every restaurant in town and finally tried J. Carvers. A definite improvement on the classic steak restaurant, it strikes a great balance in elevating the classics without trying too hard or doing too much, food is very fresh. The kids said it’s their new favorite! Great for a date night or family dinner, lots of seating areas and options while still remaining intimate.

    Phil our somm and Keri the GM were so helpful. The dishes delish. Juicy filets and my Dover sole tasty esp with the lump crab on top. Fun place J. Carvers with great special old Fashions. It’s always enjoyable at this well located restaurant!!

    My husband and I have sat at the bar three times now. I cannot quite remember the main bartenders name, but he makes our experience memorable every time! Food was amazing. We will be back.

    The evening started off a bit uncomfortable. We were seated at a table next to a large party that was so loud we could hardly hear ourselves talk. Not to mention, it was very cold at the table. Thank goodness for the lovely waitress (wish I could remember her name). She understood our concerns and immediately got us another table. Not only was it more quiet, but also much warmer. She also made sure that we were comfortable, she brought us water, orders and delivered our drinks. The oysters were delicious, the smoked hamachi excellent. We ordered the sole and 10 oz filet. Both were exceptional. We thoroughly enjoyed the entire experience.
