J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

Please reach out to our reservationist for private dining.
We offer Valet at $12 daily

Great steak. Great wine and cocktails. The bread app had too much schmear so it was too rich and the creme brûlée was cold but other than that- cool spot.

A best in class experience! Planned our 10 year anniversary dinner at J Carver’s because it is one of our favorite spots in ATX!!! The food is always a 10 and the service a 10 as well. And once again, they delivered. Food exquisite and the service above and beyond to make our anniversary so special!!! Jessie, our server at the bar, was amazing, thoughtful, attentive and just made the night so special.

I don’t leave reviews often, but I feel I need to praise J Carvers for an exceptional experience last night. Everything was amazing. We had 5 at our table and all of us wanted to try several menu items so the waiter said we could order the dishes and share (family style) and it was perfect. We tried the filet to share, short rib ravioli and Dover sole dishes as entrees. Some of us got 2 oysters each and we split a few salads for appetizers. We also shared a few sides. The food was fantastic and just the right amount for all of us to get a sample of the menu. Perfection. Highly recommend this restaurant.

We went for my boyfriends birthday and sat at the bar. The service was wonderful and the bartender was very attentive and informative over the menu. We had a great time and enjoyed everything that we ordered. The bone marrow was favorite of the night! Definitely will be coming back!

Especially wonderful service this visit, but that is always the case. Food and drinks were delicious, and the server was extra kind to my young daughter, it made for a very special dinner. Love J Carvers!
