J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

Please reach out to our reservationist for private dining.
We offer Valet at $12 daily

We went for my boyfriends birthday and sat at the bar. The service was wonderful and the bartender was very attentive and informative over the menu. We had a great time and enjoyed everything that we ordered. The bone marrow was favorite of the night! Definitely will be coming back!

Especially wonderful service this visit, but that is always the case. Food and drinks were delicious, and the server was extra kind to my young daughter, it made for a very special dinner. Love J Carvers!

Chris took phenomenal care of us for our 13th wedding anniversary. We had the sole and the filet- both cooks to perfection. we started with cocktails & the crabcake. All of his recommendations were spot on and we cannot wait to go back.

Our meal was excellent! Had our steak served carpet bag style, which was perfect for the two of us. Portions were large. The staff was very knowledgeable on all the menu items and very accommodating. We thoroughly enjoyed our evening.

We love to dine at J. Carver’s any chance we get. The staff is always so friendly and knowledgeable, the food is FANTASTIC- from start to finish. Some favorites are the escargot, the loaded potato Gnocchi, and the Dover Sole. Upon arriving, we waiting approximately 1-2 minutes to be seated by the friendly hosts, Gina was our server this time and she was fantastic. I will say the time between ordering and receiving our martinis was a little longer than expected, but that was not enough to bring down the rest of our 5 star service.

Best food in Aaustin - everything is very expertly cooked and fresh. It’s a little expensive however for special meal one of the best restaurants in Austin
