We invite you to join us for our playful exploration of flavour, that is equal parts: intuition and experience. With often primitive methods of concoction such as fermentation, smoking, raw dishes, curing, pickling and the magic and unpredictability of cooking over wood fire – all coming together with elegant execution in dishes designed for sharing and pairing. Purposefully a little disruptive, we take an approach to dining that is fun, and encourages looking at traditional ideas from a new angle. This can be anything from getting stuck in with your hands, to rehashing recipes with funky local produce. We never stand still and continue to evolve – just as fire refuses to hold a single form.

    I had the pleasure of dining at Kaandela, an elevated yet casual, haute cuisine, quiet luxury concept that is a gastronomic gem. The farm to table menu is inspired by the region and uses ancestral techniques to create an explosion of perfectly balanced flavors. The restaurant’s general manager Luis Afú, gave me the rock star treatment with a personal tour of Amarla, the boutique hotel which houses the restaurant. The food, service, and ambiance were all truly exceptional. They exceeded all my expectations and created a memorable evening filled with genuine artistry. Their executive chef José Aparicio is worthy of a Michelin star, his passion shines through the menu he is executing at Kaandela, it’s fire!

    Very small portions ,actually insulting for the price. Meat was filled with fat and more bone than meat.We have been here numerous times and it was always excellent but this time it was a real disappointment and we will never return.

    Pork belly pops were good. Salad was extremely rich. Entrees came out cold. Dessert (guava pudding) was the best part. Service was just ok, they were very busy.

    Sat in front of chef window so witnessed all the food coming out. A salad was sent to a table of 20+ guests that was sent back and sat under the heat lamp for 50+ mins. I ordered the pork shank and when our food finally came out, they served that wilted salad as my “mixed vegetable” side. I was so digested and shocked considering we were right in front of the window where food comes out. We also saw our appetizer sit under the heat lamp for almost 15 mins before it was served to us. The service wasn’t good.

    The dishes on the limited menu are excellent. Each member of our party of 4 enjoyed their meal. Our server was very good but over occupied with other tables due to staffing. The noise level in the dining area was extremely loud. Dining in the bar was much more relaxed but they only have booths for two.

    The guys were really trying to do the great service and food. But actually nothing special. The only thing is a nice cheerful atmosphere and very friendly staff
