Our culinary ethos extends from the fact that we are in one of the most bountiful biomes in the world. Thanks to the abundance of nutrients in the soil, pristine watersheds, and a mild oceanic climate designation with plentiful rain and moderate climates, our chefs, garden team, and purveyors are able to grow about 95% of what we use in the kitchen within 80 kilometers of our Estate. The fisheries and livestock farmers that we work with sustainably supply us with incredible products that our chefs combine to create memorable dishes and which showcase the terroir of Liss Ard Estate, County Cork, and Ireland in a broader sense.
