OpenTable美食編輯：《洛杉磯時報》曾將Peter Merriman譽為「夏威夷群島的Alice Waters（美國名廚）」，盛讚這名主廚運用在地食材的廚藝精湛，多年來無人能出其右。於1988年在夏威夷大島上開業的第一家Merriman's，將夏威夷堅果脆煎鬼頭刀和香酥芋球等夏威夷經典菜色變化出新滋味，成為餐廳招牌。截至2018年，該餐廳集團已經在夏威夷的四座島嶼落地生根。最新開設的分店位置在檀香山，餐廳內採用色調鮮明大膽的綠白相間地板和叢林印花布料，格外引人注目。

We ate outside which is a less noisy than the inside of the restaurant, but a little cooler, so bring a jacket if you are dining in the evening! We really enjoyed our meal, including the lobster pot pie and macadamia crusted fish. Our server was lovely!

This was a Friday night of a long weekend, so the restaurant was packed. It's great for them to keep busy; not only does the restaurant make money (as it deserves to), but it's also good for food turnover. However, we did have a longer wait time to get seated, and also to get our food. We decided to order a lot of appetizers. The onion soup was excellent as usual. However, the cavatelli was overcooked (not al dente) even though the sauce was very tasty. Also, the garlic roasted shrimp was overcooked. This suggests the kitchen was swamped, and unable to give their usual close attention to details. The kalua pork quesadilla was okay.

The food and service was excellent. The restaurant was really noisy but I guess that’s to be expected on a Friday night at 7pm. If I go again, I would try to get a table outside.
