Former Senor Ceviche Head Chef, Mark Morrans is the mastermind behind the new menu, using his extensive knowledge and skills to enhance the MNKY HSE’s focus on Latin American flavours. As a result of Mark’s boldness and love for experimentation signature dishes from his new menu include the likes of Hamachi Tostadas, Seabass Ceviche, Japanese Wagyu Strip Loin as well as instant favourites such as Lamb Shoulder Tacos and Soft Shell Crab Tempura.
