Noble Pie was born out of practice, patience, and obsessive experimentation. Inspired by travels to many of the great pizzerias of North America, self-taught pizza maker & owner Mike Lange devotes methodical care and attention towards every element of your pie. Our dough recipe is dynamic; a constant work in progress. We are dedicated to the pursuit of new knowledge, processes, and ingredients in an effort to perfect our fermentation and baking techniques.
Transitioning from a pizza pop-up to a brick-and-mortar location in 2021, our focus remains the same: simple pies, meticulously made.
