Dined here on 4/3/25 for the first time since the extensive remodel and the new restaurant concept. Parc Proprietors, Maryanne & Harley Sefton greeted us for our 7:45 reservations with a warm and inviting introduction. This particular evening was even more special as Parc was donating a share of all their dinner sales to a local non-profit, Challenge Aspen.
We were given an option of sitting in the beautiful, intimate dining room, or at the cozy bar, equipped with small tables and comfortable bar seating. We opted for the bar where we could order from a full dinner (and bar) menu. We started with the Brussels Sprouts & Sweet Potatoes made with Maple Gastrique, Almond Brittle, and Red Onion. We've always been fans of the Pappardelle Bolognese which is a staple, made with housemade pappardelle, beef & pork bolognese, and shaved pecorino-$20 - Amazing and filling. We also shared the Green Circle Chicken, made with mushroom spaetzle, basil, banyuls honey -$28. The chicken was tender and packed full of flavor and the spaetzle was a wonderful complement. We drank yummy malbec after our perfectly prepared martini's.
We enjoyed the atmosphere which is energetic, warm and not too loud; actually quiet while we were there. The staff is personable, clean and professional. And of course the food is delightful and enticing. We are excited to return this summer to enjoy the full dinner menu, and perhaps their outdoor seating option.
