All of these 4-5 star reviews are fake and/or paid for. If I could give this place a zero, I would. We booked this for NYE with high hopes and really wanted to like it. I booked the reservation a month out. They cancelled my reservation two weeks later and messaged me saying that I needed to rebook and put a $100/person deposit down with a 20% tip for a special curated four course meal. We were looking forward to checking this place out for the holiday, so we put the deposit down. A week before, they messaged me again saying that they weren’t having this special menu anymore and instead they’re doing an a la carte menu. I should’ve known then to steer clear of this place because they were clearly disorganized and had no plan or vision. Once we actually got to dinner, all of the food was either very weird tasting or completely bland with teeny tiny portions for the cost, not that you’d want anything to go. We ordered sides, apps, main entrees and even dessert. They say they’re going for “simplicity” but it felt like they were trying too hard and ultimately failed horribly. None of it was more than tolerable at best. We barely ate the food and didn’t take anything to go. At the end of the meal, we were surprised to get a bill without a credit since we already paid for our meal in advance. The “manager” comes over saying that we were refunded. We showed him that we were not refunded and just charged. He then said we weren’t refunded yet, but would be. We expressed how displeased we were with the meal and the back and forth prior to the reservation that had led us to this point of needing to pay for this horrible meal a second time. The manager admitted that their actions were silly and didn’t even bother to apologize for the horrible experience. No chance this place lasts. Horrible food and experience for way too much money. This place is extremely overpriced. There are much better places you can eat for this price for or way less.. dollar menu for example.

The food and the presentation was fantastic, and the service was top notch. It's a must see and must experience place when you're in Denver.

Our favorite meal and dining experience we’ve had in Denver. Food and drinks were delicious. Service was outstanding.

Was very excited to try this place out. The interior is lovely, our server was lovely- but man the food was not up to par and certainly not worth the price. Crab soup was the best of what we had, and I don’t even think we finished that. There are plenty of places in Denver that are sustainable and locally sourced and are exponentially better and that aren’t as over priced.

Dining at the Populus Hotel was a unique experience from the mushroom “leather” sheets hanging above the bar to the ambience forest sounds playing in the elevator. the food was incredibly delicious and the personnel were very friendly but authentic in their manner of serving. I was fascinated watching the actual hotel guests walk in and out. It was a hotel filled with interesting people. We had appetizers and drinks below at Pasque and then went to the other restaurant, Stellar Jay on the roof and continued our dinner. The food in both places was excellent, the wood smoked quality that many restaurants boast about in Denver was better actualizad at these two restaurants and gave the restaurants a welcoming sweet Smokey smell. I even loved the staff uniforms.

We were there for lunch Christmas day. I ordered a chicken salad sandwich that was awful. There was too much bread, so I took off the bread and there was very little chicken. I left there very hungry. Beware the valet service. Website says $8 for restaurant, and they insisted on $10. I don't think that was hotel policy, just sleazy valet.

Enjoyed our breakfast there. They make their own sausage and I'm not really a sausage fan but it was delicious. We will be back
