At dinner (for 2), we shared one chef's tasting me and the kimchi stew. The meal was excellent - the chef's tasting menu include a squash soup, sashimi salad, buckwheat noodles with chicken, beef short rib, and a sweet cream with rice cake dessert. The portions are on a bit on the smaller side but each bite is flavorful. The kimchi stew was tasty and spicy. Our waiter was friendly and checked in throughout the meal. Ambience is modern.
There are some areas of improvement:
- The kimchi in the stew could be cooked down a little more. Typically the kimchi is this type of soup is soft but some pieces were crunchy, suggesting that they were not boiling for too long. The adjacent table ordered the same dish and they seemed surprised that their soup came out within 2 minutes of ordering, and admittedly, I think this suggests that the soup is mostly pre-made and the tofu + kimchi are simply added to the broth and served. At this price point, I think people would expect that the soup is made to order.
- There could more beef in the short rib dish. It came with one rib - at this price, would be ideal to have 2-3 ribs.
- The service could be optimized. I get the sense that they are a little understaffed at the moment and figuring out the flow of service. At this price point, I think patrons expect that service will be well coordinated and seamless.
- The inside of the restaurants is modern. To highlight the intimacy of the restaurant, it would be nice to install curtains around the restaurant so that diners feel more separated from the market.
- Water cups are too small. It would be nice to serve barley tea (at no cost).
- I'm giving 5 stars for overall rating but this is mostly to offset some negative reviews, which I think are too extreme.
