Worldly influenced American cuisine focusing on farm to table and self sustainable practices by 2 highly qualified chefs preparing everything on premise from soups, breads and icecreams to pastas, sorbets and sauces using the highest quality ingredients seasonably available.

Roger J. Foster a graduate of The Culinary Institute of America and Charles E. Wilburn a graduate of Johnson & Wales University both chefs are well versed in their customers special dietary needs.

Rogers green thumb and ambitions in the garden produce a number of different ingredients including lettuces, squash, beans, berries, apples, plums and tomatoes. Both chefs assist each other with the raising of their laying hens, meat chickens and turkeys ( NON GMO fed ) as well as tending to the restaurant's honey bees. The majority of the beef, lamb, pork and chicken used is locally sourced and pasture raised. we also focus on natural wild caught seafoods, and use NON GMO oils in preparation.

A lovely spot for dinner outdoors on a beautiful summer evening before the Earlville Opera performance. Our server was stretched but he served graciously without exhibiting stress. Heavenly summer squash soup, seasonal salad (the greens were grown in a garden within sight), and a surprising moo shu pork, resplendent with mushrooms and carrots. We will certainly make our way back to Poolville.

Enjoyed it. My wife's great grandmother worked here when it was an actual store so there's a bit of nostalgia when we visit. Food and service were on point. Steak was cooked perfect, potatoes good and squash was cooked well. Good ambiance. Great waitstaff.
