James Beard-nominated, Chef's Prix Fixe Tasting Experience by Executive Chef Jose Camarena, recontextualizes Mexican cuisine and culture through Storytelling.

We exclusively offer a prix fixe tasting menu experience, with a longer and shorter option. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories.

República is a tasting menu-only restaurant.
We offer a full tasting menu experience for $150 per person, or a briefer experience for $128 per person.

We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, allium, rice . Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners.

    Join us for a single night to celebrate the launch of Salt & Straw’s newest cookbook, America’s Most Iconic Ice Creams. We will be collaborating with co-founder and head ice cream maker, Tyler Malek, to bring you a 7-course dinner with ice cream in every dish. Each ticket includes a signed copy of the new cookbook. We have a hospitality fee and do not expect additional tip!

    We had a fantastic 7 course dinner with delicious wine pairings. It was a unique culinary experience that we savored. The servings ranged from interesting / good to stunning. We are not knowledgeable foodies, just folks searching for fun dining experiences on occasion. This was one.

    República was amazing! You feel well cared for the moment you check in. It’s a very intimate experience and everyone is so knowledgeable of the food and drinks. We left feeling full but not stuffed which is my favorite, we were unsure how we’d feel with a tasting menu so happy to report you don’t leave hungry. The food was multilayered flavor wise and yet maintained simple and yet expert appearance. Highly recommended!

    You guys should bring some michoacán food to the menu that would be really awesome, but over all experience was a 10 out of 10.

    The service was amazing. The staff and their knowledge of the food was incredible. The drinks and wine were spectacular! Ambience and location wonderful. I loved the sturgeon and the dessert. The rest of the dishes were ok. I wanted to love all of the food and I am very open to trying to things. However it fell short of expectations.

    My husband and I had a lovely anniversary dinner. Staff was knowledgeable about the cuisine, ingredients and history. We also did the drink pairing and it was phenomenal! Would definitely recommend! Everyone was so kind and friendly. Definitely worth every penny.
