As a casual-fine dining concept, the "Restaurant Wilhelm" is primarily dedicated to the History of the place, local influences and also Humboldt's time in Paris." Under the motto "The best of the simple, but skilfully.", the classic concept emphasizes high-quality German-French à la carte cuisine.
The responsible chef is Fabian Fiedler.
In addition to his passion for fresh ingredients, he attaches great importance to having fun at work. Before he started at Wilhelm, he was chef pârtissier at the * Restaurant Aqua at the Ritz Carlton in Wolfsburg and worked for the Restaurant Haerlin at the Hotel Vier Jahreszeiten in Hamburg.
