Our speakeasy bar Síbín is an intimate drinking den, hidden within Great Scotland Yard Hotel, influenced by the illicit bars that originated in Ireland around the turn of the seventeenth century, where whiskey and poitin (commonly referred to as Irish moonshine) were the drinks of choice. Síbín pays homage to Whisky and features a curated selection of global whiskies, alongside signature cocktails and premium wines and Champagnes.
We take an inclusive and dynamic approach, moving away from stuffy preconceptions. Consisting of over one hundred bottles, sourced from around the globe, our Whisky collection is an ever-evolving selection of limited editions. We are more than a bar and host exclusive events such: cocktail masterclasses, live music, ensuring each visit is a unique experience.

Even though we had made a reservation via Open Table (which was confirmed numerous times by Open Table up to the day of the reservation via text and email) the restaurant was closed, leaving us to have to figure something else out on short notice in a place and on a night where most kitchens close early leaving us hanging on food. This was frustrating and disappointing. This place is only open Wednesday to Saturday. We arrived on Sunday and left Tuesday so we never got to experience it. We were able to at least see what it looked like the next morning as it doubles as the baggage storage area.

We were at Sibin for a Pisco masterclass. The event was friendly, very informative and loaded with good Piscos and cocktails! We also appreciated the canapes, and we would have definitely reached for more. I am looking forward being back for another relaxed evening.

We were booked in. A first date and we arrived to the place to find out it was closed. We then asked could we get a drink in the hotel. They agreed. They gave us a pathetic apology and sat us at a table. I asked for a menu they said yes. 10 minutes later still nothing so I decided to go to the bar and again asked for the menu where they the group of staff that were floating around the cashier looked at me like I had two heads and then obnoxiously said yeah we will bring it down. I’ve worked in hospitality the bar wasn’t busy. Brutal service and pathetic attempt to try and rectify the mess up of the booking being even booked. I wouldn’t recommend this place to anyone.
