Val Taleggio, Bergamo, Italy. Cow's Milk. Reminiscent of camembert. Think of this as stinky cheese 101. The taste is mild, delicate even. This is one of our all time favorites. Creamy, thick, with hints of woodsy mushroom. Suggested Pairings: Pinot Grigio
Normandy, France. Goat's Milk. Washed rind, with both warm buttery, savory notes and tangy, fruity undercurrents. You can taste the mild milk and grassy flavors of the beautiful Pays d'Auge in this very special cheese. Suggested Pairings: Tempranillo / Chardonnay
Albacete, Ciudad Real, Cuenca and Toledo, Spain. Sheep's Milk. Recognizable basketweave rind. Subtle and approachable, with undercurrents of butterscotch and caramel. Suggested Pairings: Tempranillo (Any Spanish Rioja) /Stella Rosa Black / Cava
Jura Mountains, France. Cow's Milk. The original farmer's cheese. The morning and evening milk are separated by a layer of vegetable ash. Its strong aroma belies the mild flavors of mountain grass. Suggested Pairings: Any of our White Wines
Holland. Cow's Milk. Aged Gouda, reminiscent of Parmesan, full bodied paste with tiny salt crystals dispersed throughout. When biting down, the crystals burst in your mouth, turning the cheese to cream. Suggested Pairings: Cabernet Sauvignon / Syrah / Red Blends / Sauvignon Blanc / Pinot Grigio

Italy. Natural sea salt and air cured for a minimum of 2 years. A thin layer of salty fat combines with delicate smoke to melt effortlessly in your mouth. Suggested pairing: Chardonnay
Corsica, France. Corsican whole muscle salume. Seasoned with red wine, garlic and herbs. Delicious, meaty loveliness. Suggested Pairings: Any Bubbles / Sauvignon Blanc /Spicy Reds (Syrah / Malbec / Tempranillo)
