Open for Lunch, Happy Hour in the bar area, and Dinner!

With slow-roasted local meats. Rich savory sauces. Handmade pasta. Fresh-from-the-farm vegetables. Volario’s serves bold, earthy fare inspired by the pasture-rich terrain and fragrant kitchens across the Italian Alps – right here in the Rocky Mountains.

With a menu that changes with the harvest of the season and the catches from the streams, Volario’s surprises the palate with both local produce and faraway flair. As you savor the rustic and robust flavors from the mountainous regions of northern Italy, we invite you to sit back with a nice Chianti and reflect on your day in the majestic mountains here.

Our dishes are hearty and adventurous, much like Volario himself. The legend in the Grand Valley is as old as the pines that shade the creek. Volario wasn’t from these parts. Like many of us, he visited and couldn’t imagine leaving.

                  Unfortunately Volario's is struggling. Waitstaff working as hard as they can but they are overwhelmed and understaffed. No Busboys so finished tables sat covered with dishes and glasses the entire time we were there - 2 hrs. Suggest matching the number of tables you book to the staffing that evening? Ordered Charcuterie Board as a starter and while nice looking had mostly meats and cheeses we can buy at Safeway, including Brie cheese - not italian. Had Risotto as a main but arrived as a bowl of gloppy rice and certainly not al dente. Definitely needs work. Gnocchi was OK. Not the professional experience I would expect for a $120 bill.

                  A reliable Italian option in the past so we don't really mind the 20 mile drive each way to the restaurant. Possibly an off night or a staffing issue. Very log wait between seating, salad, and extended wait for entre. Had to ask waiter for water refill repeatedly and any condiments ie. pepper and parmesan cheese. Our waiter did step up and credit us for 2 entres due to the extended delay in receiving our meals.

                  A real gem in Winter Park, CO. Food was excellent, fresh home made noodles. Service was excellent. Really great experience, highly recommend

                  Overall, a great experience they were a little shortstaffed and they hustled all evening and tried there very best. The food was good. The drinks were good and the service was excellent.

                  The food was delicious but we waited an hour before we even got our cocktail. I felt bad for our waiter since the restaurant was clearly understaffed. But once our drinks came, everything else progressed as one would expect

                  Great food and wonderful service! We had the Arrabbiata and the bolognese which is like a deconstructed lasagna. David the Manager came to our table and treated us like gold. We’ll be back!
